

Summer is coming which means so many more social engagements :) This salsa and guacamole make a regular appearance in our circles. Fun to take along as snacks with some organic corn chips, or as part of the toppings at a Mexican potluck!
Add some jalepenos for a bit of heat and play around with the quantities to get it just perfect for your taste...

1/2 small red onion
Juice of 1/4 - 1/2 lemon
2-3 tomatoes
A handful of fresh coriander
Good pinch of salt (we like the Harkers Celtic Sea Salt with Kelp)
Chop the onion & place into the bullet/blender/food processor.
Add the lemon juice, salt and pepper.
Chop the coriander and add.
Pulse 2-3 times - you want it to stay chunky.
Chop the tomatoes and add them .
Pulse 1-2 times.
Taste test and add more salt and pepper or lemon if needed.
Pour into a bowl or jar, leaving 2-3 of tablespoons behind in the jug for the guacamole.
**It's really important not to overblitz as you'll end up with a tomato and onion smoothie which is not quite the same!
2-3 tbsp salsa
2 avocadoes
salt & pepper
Peel and deseed the avocadoes.
Add them to the jug with salsa and blend for a few seconds.
Alternatively add the salsa to a bowl with the avocadoes and smash with a fork.
Add salt and pepper to taste.
