What better way to use an abundance of lemons than to make yummy lemon custard. As with most of our recipes...use this as a base and adjust the honey/dates and lemon according to your taste buds.
We love it nice and lemony :)
1/2 cup shredded coconut
2tsp vanilla essence
2 or 3 dates or 2 tsp raw honey
Juice of 2 lemons
1/4 cup water
Cook over a low heat until it thickens.
Allow to cool slightly and blitz to form a thick, smooth custard.
