Banana loaf is an all time favourite in many households, and it's pretty easy to turn the gluten and sugar laden traditional recipes into a healthier version. 


This gluten-free banana loaf recipe is super quick and easy. Enjoy getting a bit creative with your additions, depending on what your family like and what you have in the pantry! 




3-4 very ripe bananas mashed well 

75g butter 

½ cup of coconut sugar or 3 tbsp raw honey (optional)

120g of gluten free flour- can use most flours except coconut flour 

1 egg beaten

1 tsp vanilla extract

1tsp baking soda

Good pinch of salt

Optional additions: Nuts/seeds/coconut thread/dark chocolate bits/cinnamon




Mix melted butter and mashed bananas. 

Stir in beaten egg, coconut sugar/honey (if using), and vanilla.  

Stir in flour, baking soda and salt thoroughly.

Add any nuts or other additions if using and stir through.  

Place mixture in loaf tin or muffin tray- please note mixture should creep not pour.

Add water or flour to adjust consistency if required. 

Bake 175C for 15 mins if in muffin trays and around 30mins if in loaf tin- watch carefully for a loaf.
