These date cakes are delicously moist and so simple. Another recipe that's perfect just the way it is, or you can add anything you like to mix it up a little and keep it interesting. Nuts, fruit, spices, seeds...the world's your oyster :)
1 cup water
2 eggs – beaten
1 tsp baking soda
180g gluten free flour- can use variations
1 tsp baking powder
Put dates and water into a pot- boil for 4 minutes or so until you can mash the dates.
Add butter and stir until melted, remove from heat.
Stir in beaten eggs, and baking soda - the mixute will become frothy.
Stir in flour and baking powder.
Pour into muffin tins or loaf tin or cake tin.
Bake at 170 C for 15 mins or until a skewer comes out clean
