Deliciously lemony, these raw balls are perfect little lunchbox treats for the kids since they contain no nuts.

 

Play around with the honey...you may find you need less which is even better. Remember to use raw honey if possible that hasn't been stripped of its goodness. 


 
 

Ingredients:


 

1 ½ cup coconut 

½ cup coconut for coating 

4 tbsp. extra virgin coconut oil / or butter

4 tbsp. honey 

Zest of one lemon

Juice of one lemon

1 tsp vanilla extract 

Pinch of sea salt 

Optional: A handful of dried apricots or fruit of your choice

 

Method:


 

Add all of the above ingredients except the apricots to the food precessor. Blend until mixture starts to form together like a dough. 

Form into balls with the chopped up pieces of apricot. Then in a separate bowl, roll the balls into the coconut until well coated then transfer to a plate. You can make this as a slice too. 

Allow to set in the fridge for 30min.
