Mousse makes a delciously indulgent treat no matter what time of the year! It's perfect for a Christmas dessert because it's so simple to make and packed with healthy fats and antioxidants. A great alternative to traditional sugary desserts that leave us feeling sluggish and "hungover" after Christmas lunch.


Fancy it up by serving it layered in wine glasses or jars or even in silicon cupcake holders for a bit of fun. Use fresh berries, nuts and coconut chips. cacao nibs and fresh flowers as toppings for vibrant and festive decoration. 


Chocolate Mousse:


1 ripe avocado

1 large ripe banana

2 tbsp chia seeds (for setting the mousse)

4 tbsp cacao

540 ml coconut cream

1 kiwi fruit (optional)


Puree in your food processor until light and creamy. 

Chill until set.


Raspberry Mousse:


35 ripe strawberries

2 tbsp chia seeds

1 large ripe banana


Puree in food processor until light and creamy. 

Chill to set.


Each of the above makes 4 good sized servings, so if you're going to make both and layer them it will be enough for about 8 people. If you're adding berries and nuts you may find it serves more, but double or triple the recipes depending on the size of your party!


If you're layering the two, do this step before chilling to set.
